In honour of our Canadian boys winning GOLD in the Olympics on Sunday, I am posting another (yummier??) version of our famous hockey bread.
This variation uses the same white bread dough I always use – with a bit of a twist on the filling.
I filled it with chicken (cooked in smokey BBQ sauce, then shredded up), fresh basil, roasted red pepper and onion, asiago and mozza cheeses … served it with a nice, warm tomato / bbq sauce… sooo yummy.
