Aunt Bet’s Crispy Chicken Breast

Sometimes, the simplest things are the best.
This chicken recipe was one of the things my great aunt Bet would always cook for us – and after you try it, you will see why : )


Ingredients / Method:

1 lb boneless skinless chicken breast, pounded to ¼ “ thick between waxed paper

Dip in egg and 1 tbsp water

Dip in equal parts fine bread crumbs and parm cheese

Chill for at least an hour

Fry in ½ butter and ½ oil at med heat 2-3 mins per side until golden and cooked through.

Serve with lemon.
