Dairy Free Ice Cream!

I made some dairy free ice cream on the weekend (the chocolate one below) and it was SUPER!
Everyone who tried it, loved it.. (the kids did too!) It has quite a dark chocolatey flavour because of the cocoa and I was actually suprised the kids didn’t find it too dark… it was a huge hit anyway…

I just made the pumpkin one and put it in the freezer… it tastes exactly like pumpkin pie! I hope it freezes as well as the chocolate one did. Here are the recipes:

Pumpkin Pie Ice Cream-with Coconut Milk

1 1/2 cup pumpkin puree
1 14 oz can unsweetened coconut milk, not lite
1/2 cup maple syrup
1 tsp. vanilla
1 tsp vodka (can omit this – it is so your ice cream freezes well and not too solid)
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg, freshly ground if possible
1/4 teaspoon cloves
dash of salt

Combine well together (a blender works well), and put into an airtight container.
Freeze for 6 hours, mixing ice cream every few hours until firm.

Chocolate Coconut Milk Ice Cream

1 14 oz. can full-fat coconut milk
1/4 cup + 2 Tablespoons cocoa powder
1/4 cup honey
1 tsp vodka (can omit this – it is so your ice cream freezes well and not too solid)
1 teaspoon vanilla extract
dash of salt

Combine well together (a blender works well), and put into an airtight container.
Freeze for 6 hours, mixing ice cream every few hours until firm.
